Dave’s Famous Chicken Salad (sandwiches)
Ingredients:
1 head of lettuce
1 large tomato
6-10 green onions (depending on their size or your tastes)
1-2 lbs chicken breasts, slightly frozen
1 cup of flour
1T Lawry’s Season Salt
12oz (bottle) Poppyseed Salad Dressing*
2T cooking oil
8 Toast slices
Cut the chicken breasts into half-inch pieces. Mix flour and Season Salt in a Zip-Lock bag. Coat chicken pieces by placing in Zip-Lock bag and shaking contents until all chicken pieces are coated. Brown the chicken pieces in oil until cooked throughout. Set aside. Remove lettuce hearts and discard. Chop remaining lettuce into half-inch pieces. Chop tomatoes into half-inch pieces and add to lettuce. Chop green onions into ¼ inch pieces and add to lettuce mixture.
Just prior to serving, add the chicken to the lettuce mixture, then pour about 2/3 of the bottle of poppyseed dressing over the top. If you use too much dressing it will collect on the bottom of the bowl and look messy. Start with 2/3 of the bottle and add more to taste. Mix by folding chicken and dressing into the lettuce/tomato/green onion mixture. Serve on toast slices. Feeds eight and then some.
Notes:
*Seemingly no longer available Oak Hill Farms Burgundy Poppyseed Dressing was our go-to dressing for this dish. As a substitute you can take regular poppyseed dressing and mix in 2-3 tablespoons of Mogen David wine to create an equivalent dressing. Raspberry poppyseed dressing also works, also mixed with Mogen David or similar sweet wine. A good Burgundy is a third option.
